So what did yall have for lunch today?
I had a chicken shawarma salad and some hummus and pita.
omfg so good
I love hummus. I could live off hummus alone.
I am going to have black beans, corn, and turkey taco meat (its actually very tasty) with fresh salsa and blue corn chips in ten minutes. Im stoked.

That sounds pretty good. I cook a lot of ground turkey and love turkey burkers.

OK this is from memory so I might be off a little but Ive made it so many times so Im sure its right; you can tweak it to your own taste ya know. I just chop up however much of each one I feel like but here is what I usually go for:

2 T shredded/minced carrots
2 T chopped cilantro (you can use parsely also)
2 T minced onion
2 T minced green pepper
2 t minced fresh ginger
2 cloves minced garlic
a few dashes of pepper
1 T soy sauce
1 T water
1/4 c oats
1 T worchestire sauce
1 lb ground turkey, white preferred

Cut up all the veggies and mix together. Add the oats and liquids and stir. add turkey and mash it all up with your hands and form into 4 beautiful little patties. Heat skillet to medium high, and use cooking spray or sesame oil on the bottom of the pan. I like sesame oil. Cook like a burger. They are great on buns with cucumber slices and peanut butter or spicey peanut sauce. I have been having them over brown rice with sugar snap peas and thai peanut sauce mixed with coconut milk. Also very tasty. I have made with lean ground beef and that is also good, but omit the water, not necessary.
They are great re-heated too. OMG I want to make them right now just typing this!
Oh and yes I agree eggplant and tofu are good and good for you and I have no comment beyond that!

I eat soy burgers that are almost identical to that. They're made by Morningstar Farms are are awesome.
OMG make it yourself, its 10X better!!!

Thats nice and all Dong, but you didn't give your opinion of eggplant OR tofu!
They're like anything else; they're delicious when cooked with the right additional things, but nasty if done improperly.
